With the scrumptious cooler temps around here lately, our soup pot has been moved front and center. Today, I thought I would share with you one of our favorites.
This recipe couldn’t be easier and is yummy too!
If you can open cans, you can make this soup.
Does opening cans count as cooking? Here is does!
Cowboy Soup
1 lb. hamburger
1 onion
1 can creamed corn
1 can Spanish rice with taco seasoning
2 cans mixed veggies
1 can diced tomatoes
1 can Rotel tomatoes
Brown the hamburger with the onion and salt and pepper. Drain the veggies if you want. Sometimes I do. Put everything together in a large soup pot or your crockpot and you have a quick, easy meal that might even taste better the next day.
I make a few adjustments to the recipe. I can’t find the Spanish rice around here, so I substitute chili beans. If your family really likes corn (and mine does-all about the corn around here!) add another can. I also add a can of tomato juice because We like soupy soup.

Susan,yes ma'am I cook out of my pantry and freezer every day….and I do love me some semi-homemade,it makes life easy,right,and we love to cook and the easier the better we like it.
Yep the soup/chili pot takes center stage(stove-top)
We love us some soups and chili.

Yes, opening cans and mixing things together certainly counts as cooking! And this soup sounds like a winner! I'm always looking for new recipes, and ones that are easy, quick and don't require a lot of unusual (i.e., hard to find) ingredients are winners in my book! Now that we've got fall weather, I'll definitely be making this soon! Thanks for sharing this!
