The Best Soup Ever

Today, I’m sharing the best soup ever with you. I have made this one many times and everyone, or almost everyone, in our family loves it.

We love having a full table at our house and thankfully, we often do. If we won’t all fit, we drag another table into the dining room and set it up at the end of the big one. Nothing matches. The table is set with a mix of chairs, 2 kinds of tablecloths, and an assortment of plates, glasses and silverware. My tablescape is certainly seldom Pinterest or Instagram worthy, but that is fine by me. It might not be fancy but the conversation is rich and the food is almost always good. ( I hit a miss occasionally, but people are polite. For example: Salted Caramel Ice Cream)

On another note: Can someone tell me where silverware goes when it disappears?

A Legacy of Hospitality

My mom and dad and Brad’s, too, taught us the love of a full table. Regularly, my folks would host gatherings of 25 or more and they did it with ease and no yelling that I can remember. As our family grew, they added more and more leaves to the table in dining room one. That table can hold at least 14 if we squeeze close together,  and they had another big table in dining room two.

This isn’t the best quality picture, but it is the last time we sat around this table.

My sisters and I were usually in charge of clean-up, but good conversations happen when your hands are in soapy water or carrying a dish towel so we didn’t mind. I cherish those memories and the people who joined us.

Eating out used to be a treat, but we do it so often now that a meal out has to be really special to get 5 stars from me. What an honor it is to be invited for a home-cooked meal in someone’s cozy house!

Recipe Fails

This month, I’ve been working on my meal planning habit, trying to build one actually, and I have tried several new recipes. Here is what I’ve learned. Just because someone else likes a recipe, doesn’t mean we will. Just because someone includes it in a blog post doesn’t mean it is good. Just because it is on Pinterest, doesn’t mean it is tasty.

One soup I tried this month had to all be dumped. No one liked it, even though it sounded like it would be good. I had more misses than hits with the recipes I tried.

I’m on the lookout now for recipes that I know someone actually has made and loved. You, too?  I guess that is why my favorite cookbooks are community ones. Thankfully, I have a stack of them to refer to. And friends who are great cooks.

I, unfortunately, don’t remember where this recipe came from originally, but I’ve had it for years. It takes a little time to throw together, but the taste is so worth it. Hope you enjoy it, too!

Cheeseburger Soup…The Best Soup Ever

Cheeseburger Soup

This hearty soup is a family favorite.

Servings 8

Ingredients
  

  • 1/2 pound ground beef (I usually use a pound)
  • 4 tbsp butter, divided
  • 3/4 c chopped onion
  • 3/4 c shredded carrots
  • 3/4 c diced celery
  • 1 t dried basil
  • 1 t dried parsley flakes
  • 4 c cubed peeled potatoes
  • 3 c chicken broth (Add more if you like it more "soupy")
  • 1/4 c all purpose flour
  • 2-4 c shredded or chunked Velveeta
  • 1 1/2 c milk
  • 3/4 t salt
  • 1/4-1/2 t pepper
  • 1/4 c sour cream

Instructions
 

  • Brown the ground beef. Drain and set aside.
  • In same large saucepan, melt 1 T butter over medium heat. Sauté onion, carrots, celery, basil and parsley until veggies are tender, about 10 minutes.
  • Add potatoes, ground beef and broth; bring to boil. Reduce heat; simmer , covered until potatoes are tender, 10-12 minutes.
  • Meanwhile in small skillet, melt remaining butter. Add flour, cook and stir until bubbly, 3-5 minutes. Add to soup; bring to boil. Cook and stir 2 minutes.
  • Reduce heat to low. Stir in cheese, milk salt and pepper; cook until cheese melts. Remove from heat; blend in sour cream.

    Tears today as I read your post!🥲
    The full table…such a gift!

    I am going to try your soup recipe! My Mom is spending the next 6 months with Craig and me. I have instituted Soup Saturday when I make a homemade soup to be used all week. SO… I am always on the lookout for good soup recipes…especially easy ones! 😍
